Once downloaded on to my machine, if I change the file extension from.aspx to.pdf, I can get any PDF reader to view the file. Not a great fix, as I would rather have the PDF open in my browser, whether that be Firefox or Safari.

Because all the files are encoded into a single file in a MHTML document, MHT files are commonly used to archive Web pages. You should be able to open .MHT files using Internet Explorer itself.
This could be a file association issue, you may try to re-associate the file extension to Internet Explorer and check if that helps. For more information follow the link given below follow the part which talks about Associate a file type with a program.

What is an ASP file?
An ASP file is a webpage created by a web developer that resides on a web server and may contain scripts written in VBScript or JavaScript. It is parsed on the server, which generates HTML that is sent to the client's browser. ASP files are commonly used by ASP.NET sites and websites hosted on Windows servers running Microsoft IIS.

ASP files are similar to .HTML files but are used a little differently. When a web browser requests an HTML file, the server just sends the file. However, when a web browser requests an ASP file, the server sends the request through the ASP engine, which parses the ASP file and generates plain HTML that is sent to the client's browser.
